I have lifetime & a formal education focused on sustainable food systems. Prior to my BA I spent my misspent youth traveling & waitressing; also working in kitchens. Never for industrial kitchens, always culturally motivated foods. I have flavors, knowledge and skills that support baking, BBQ, Mexican, Italian, Middle Eastern, Vegetarian, and other alternative dietary regimines as well as banquette service and catering. I have even cooked chuck wagon style packing & cooking on the desert floor for up to 30 for a week at a time. I am passionate to teach you basic or more advanced skills! Please reach out with any questions or if you would like a lesson!
I like educating people and telling road trip stories, mixing in some interesting facts - so you get the hospitality and a great time that you deserve for the money you spend on your lessons. I enjoy being social and hospitable.
Valerie was such a hoot! I came to learn a little more about how to prep for meals and basic cooking. She made it a comfortable, fun environment for learning and didn't make me feel stupid when I didn't know something or asked questions. Definitely recommend going to Valerie for a great teaching of cooking.
Answering as many questions that the student has is important for me to find out who they are and what they want to know and learn.
25 years in restaurants; while Gorden Ramsy was collecting restraunts and Micheline stars I was touring this country and working in some crazy kitchen nightmares! I have worked in some amazing places too. Not many people can brag about living seasonally and in a migrational pattern-- so I truely have seen food systems up close and personal. I collected flavors in a cultural food adventure!
For a basic cooking lesson 1-2 people 2-3 hours $160.00 includes the cost of the meal we will prepare too. Unless your seeking caviar dreams and lobster tales... then we need to price accordingly! If you like what we have done with the lesson, I am also availiable for catering jobs up to 100 guests.
Educational platforms - making food knowlege fun and approachable - I am a representatitive for the LEXICON OF SUSTAINABLITY... a PBS backed poster show... https://www.pbs.org/video/lexicon-sustainability-what-lexicon-sustainability/
I think there are many layers to who I am and they benefit a teaching experience: I am a story teller and I am coming to you to tell you food stories. My friends all love my cooking and I done lessons as a favor with a few of them... they asked and I taught a few a few kitchen tricks. A few days a week I am a substitute teacher assisting kids from pre-k to high school. My passion is to eat according to my food rights activism - Food should always be affordable, accessible, nutriously dense and culturally inspired as well as properly labled.
I have also excelled at public speaking and have been praised at having great patience.
Various age groups for various reasons. Girl scouts and adults, but what I really believe - leadership is a shared responsibiltiy and I may know how to cook well but before a lesson is over you will also teach me something - intentionally or unintentionally!
ANY cultural food affair makes me happy -- learning new things about spices or food combinations is great! I like savory for breakfast and think the world of curry to start my day - East Indian inspried OR Thai - is fanstastic!
If you're serious about cooking, try a lesson with one or two teachers and compare the value. I don't fear my competition! You will come back to me after we have too much fun!
Know yourself well... do not think you can change your entire food system in your house with 1 lesson. If you really want to create healthy change, we can work it out one smaller change at a time. Nobody does well when they deprive themselves or chase those fads! Do you just want a date night lesson? Are you looking to reorganize your current kitchen habits? The easiest part of getting what you want; comes with know what do you want.
