i am pretty new to cooking - as a single man, i don't have a lot of time, and cooking for myself is sometimes a chore. so i never developed a lot of cooking skills. that said, i am a bit of a foodie and appreciate great food and the time and care it takes. vijay was patient and took the time to show me some quick tips to save time. i was clear with what i wanted - a few meals to impress and a few meals more for everyday. with some diet restrictions on my side, we opted for some indian and some italian. vijay is good about balance .. he showed me how to take time and not cut corners (especially with indian food), but also how i could save time without sacrificing flavor with some simple tricks and tips. i now can make a mean chutney from scratch, and i can whip up a shrimp scampi that everyone loves. he's also a very nice guy.
