I'm a professional artisanal whole animal butcher and an expert of all things meat. Whether you'd like to learn how to make sausages, pâtés, cook a perfect steak, bone broth, or even break down a whole pig or lamb, I'm happy to arrange a fun and knowledge-filled class with you and/or your group!
Our classes can expand to making the perfect dumplings/potstickers, the most unctuous ramen broth, or over-the-fire cooking in your backyard.
My accomplishments included being a semi-finalist of the 2018 Eater Young Guns and being a contestant on the Food Channel hit show, Chopped.

I love interacting with food lovers and folks who are eager to learn more about the precious meats that they enjoy. It's important to me that my students come out of each class having learned more not just skill-wise, but more about the animal and the science behind the meat and fabrication methods.
