Discussing with a potential student what their preferences are (likes & dislikes),cuisine preferences, allergen issues. Starting out with techniques and simple processes like salad snd salad dressings, soups and progressing to more complex dishes.

I have had my own vegetarian cafe, taught cooking classes inhouse and offsite as well as currently have a catering business.
