I have been cooking for over 40 years and have worked for Cal state university SanFrancisco, Crystal river Yacht club Fla, the Royce hotel Pittsburgh Pa.I was the executive chef for inflight catering, to corporate, private and charter jets in Raleigh NC and have cooked for a former president , presidential candidates, Fortune 500 CEOs, professional sports teams, super star musicians, political dignitaries foreign and domestic .
I recently had to quit what I truly loved which was being in a commercial kitchen, but because of a disabling accident I can no longer work on my feet the hours required to be a chef. So I am now passing on those 40+ years of experience to my students.

What is your typical process for working with a new student?
I will ascertain the students culinary level and experience with a few basic questions. Then suggest a class level; beginner, intermediate, advanced.
What education and/or training do you have that relates to your work?
I have an associates degree in culinary arts and over 40 years in the field.
How did you get started teaching?
I suffered a disabling accident that prevented me from working in a commercial kitchen, my right foot was partially amputated and I no longer can stand up for the hours required to effectively run the kitchen.

Mainly beginner to intermediate students wanting to work in a commercial kitchen, but have also done private in home lessons.
Describe a recent event you are fond of.
While the Rolling Stones were on their farewell tour And they were in Raleigh performing at Findley stadium I had the honor to provide their private jet with dinner!
